Have you noticed that I've posted more recipes than usual? The holidays up the baking bug in me, and I just wanted to share some of the recipes that I love with you. Like Tuesday's recipe, this one is pretty easy but will take some time to set. So while you will have to wait a bit to break into this, you will absolutely love it once you do!

Graham Cracker, Cranberry, and Pistachio Toffee Brickle

About 17 graham crackers
2 sticks unsalted butter, cubed
1/4 cup granulated sugar
3/4 cup light brown sugar
1 3/4 cup semisweet chocolate chips
1/4 cup milk chocolate chips
1/2 cup dried cranberries {I used just a little bit more than a half cup}
1/2 cup roasted and unsalted pistachios {Again, used a bit more than a half cup}
3 good pinches of fleur de sel

1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with foil and cover that with parchment paper.
2. Completely cover your baking sheet with graham crackers. If you need to, break them into smaller pieces to cover the full sheet.
3. In a pan, melt the butter and sugars together. Stir occasionally until the butter is melted and the mixture has come to a boil. Once this is boiling, continue stirring constantly until this has thickened {about three minutes}.
4. Pour this mixture over the graham crackers and spread to coat. Place this in the oven and bake for 12 minutes.
5. Remove from the oven and sprinkle the bubbling caramel and graham crackers with chocolate chips. Let this sit for 5 minutes and then spread with a spatula {I used an offset spatula} to cover the caramel.
6. Sprinkle the cranberries, pistachios, and fleur de sel evenly on top. Let this cool and set at room temperature. Or place in the fridge to set.
7. Once the toffee brickle has completely set, break into smaller pieces and... ENJOY!

I recommend storing this in an airtight container in between layers of wax paper.

The best thing about this recipe is that you can really top this with any combination you'd like - pretzels, almonds, potato chips, coconut flakes... It's really all up to you!
