healthy avocado chicken salad

Healthy Avocado Chicken Salad || Sprinkles and Style

I couldn't help myself and had to share another favorite recipe of mine this week. This one, like the one I posted on Tuesday, is easy and pretty quick to make. It makes quite a large batch of chicken salad so you'll be set for lunch and dinner for some time with this.

I typically like to eat mine with gluten-free crackers {just like in the picture}, carrots and celery, or on top of a mixed green salad with a little bit of hot sauce. Or you could eat it on it's own. It's really just that good.

Healthy Avocado Chicken Salad

5 - 6 chicken breasts, boiled and shredded {I use thin sliced, boneless, and skinless}
1 cup celery, diced
1 avocado, diced
1 container of plain Greek yogurt {about a 1/2 cup}
1/4 cup of light mayo {I consider this to be optional so it's really up to your taste!}
2 1/2 tbsp. of lime juice
1 tsp. garlic powder
1 tsp. Mrs. Dash seasoning {I used Original but you can also use salt and pepper}

1. Chop and dice the celery and avocado.
2. In a bowl, mix together all of the ingredients.
3. Keep in a covered container in the refrigerator until ready to eat.

... And that's it! See? Super simple and easy.

spinach, tomato, & mushroom egg muffins

Spinach, Tomato, & Mushroom Egg Muffins || Sprinkles and Style

This recipe for individual egg muffins is a go-to for me when I need something quick and easy to whip up for breakfast or lunch. I use the same egg base every time and just add different vegetables, meats, or cheeses - completely customizable! These are so easy to make and are the perfect portable meal.

Spinach, Tomato, and Mushroom Egg Muffins

2 1/2 cups egg whites
3 eggs
Handful each of spinach, grape tomatoes, and mushrooms
Mrs. Dash seasoning {I used the Italian Medley but you can also just use salt and pepper}
2 tbsp. of water {You can also use milk}
Crumbled goat cheese for topping {optional}

1. Preheat your oven to 350 degrees Fahrenheit. Spray a muffin tin with nonstick cooking spray.
2. Chop all of your vegetables into 1/2 inch or smaller pieces.
3. In a bowl, whisk together the egg whites, eggs, vegetables, Mrs. Dash seasoning, and water.
4. Fill each muffin cup 3/4 of the way full. Top with goat cheese.
5. Bake for 20-25 minutes or until the top is golden brown.
6. Let these cool for five minutes, and then remove from the muffin tin.
7. Enjoy!

These should be stored in the refrigerator after baking. Don't worry if they get a little soggy. Once you reheat them, they'll be just as delicious!

what to watch: documentaries

With so much to watch lately {Oscar-nominated movies, the Olympics, college basketball}, it's easy to forget that there are some great films out there. For the past two months, I've been on a documentary-kick and have watched my fair share on Netflix, YouTube, and iTunes. I find that it's a really great way to unwind at night or start off a Saturday morning.

So grab a drink, a snack, and your laptop - I promise that these documentaries will not leave you disappointed!

Documentaries to Watch - Shaun White: Russia Calling || Sprinkles and Style

Shaun White: Russia Calling || We all know the outcome of Shaun White's Sochi Olympics, but this feature that first aired on NBC in January is still worth watching. It gives a behind-the-scenes look at what goes into the sport and tricks he made look so easy and effortless. You learn a bit about Shaun as a person and how hard he actually can be on himself while he's training. It was really very interesting and made me respect him a lot more as an athlete and person. {This isn't really a documentary, just a 45-minute feature.}

Documentaries to Watch - Blackfish || Sprinkles and Style

Blackfish || This documentary has made quite the buzz since it debuted at Sundance - and with good reason. It's an extremely well done film that gives background to the horrific events that have happened at Sea World over the years. It really makes you think twice about the park and the shows they put on there and whether or not they should be keeping these killer whales in captivity. It can get graphic and really sad at times, but I think this is one definitely worth watching.

Documentaries to Watch - The Book of Manning || Sprinkles and Style

The Book of Manning || My dad first introduced me to ESPN's 30 for 30 films and I've been hooked ever since. Though I didn't see it when it first aired, I made sure I saw The Book of Manning at some point. I'm not a fan of Peyton or Eli as players {both have beaten my favorite team, the Patriots, in the post-season}, but this family's story is pretty great and so touching. You learn the history of this football family - from Archie's legacy {their dad} to Cooper's illness {their oldest brother} and, of course, the great college careers of Peyton and Eli. The love in this family is so great and wonderful to see. Warning, it's a bit of tearjerker, but in a good way.

I plan on watching Scatter My Ashes at Bergdorf's sometime this weekend, though I have heard mixed reviews. Have you seen it? Any thoughts?

head to toe black

Lately I've been loving the look of head to toe black outfits. It makes getting dressed in the morning so easy when I'm just grabbing for clothes in the same color, knowing that it will all match. Even better, I think an all black outfit is chic, classy, sophisticated, and, of course, slimming. How could you not love that?

Though spring is coming {it might not seem like it with all this snow}, I'm still planning on adding a few more black pieces to my closet. I'm loving this lady-like jacket, these high-waisted jeans, and these affordable heels.

And if you're not into the full monochromatic look, it's easy to add some color with accessories like this leopard print scarf, this set of gold rings {LOVE these!}, and this pale pink bag.

currently craving: new balance sneakers

New Balance sneakers {and sneakers in general} seem to be all the rage right now. Since seeing the collaboration in the J. Crew Style Guide, I've been contemplating purchasing a colorful pair for myself. I haven't yet pulled the trigger because I can't seem to make up my mind on whether or not I love it enough. I spend some time every day browsing and contemplating, and I think I may end up buying a pair. Now the question is, which one?

How fun are the neon pairs? But with my affinity for all things in neutral shades, I'm leaning towards a pair in beige and blue or grey and white.

simple makeup

I've always preferred the more natural and neutral makeup to anything smokey or dark. While I have a ton of neutral palettes full of shimmery and matte shades, I've been drawn to the latter as of late and love the simple look matte shades create. Add in my go-to winged liner, a rosy-pink blush for that natural flush, and a "my lips but better" lipstick and I'm all set for the day.

raspberry cheesecake brownies

I'm not big on Valentine's Day, but I am a fan of themed desserts. While you could most certainly make this recipe whenever you wanted, I love the flavor combination of this delicious treat for this specific day.

And even better, this recipe is incredibly simple. Because I used a boxed brownie mix. Yes, you read that right - a boxed mix. You can judge me, but it's easy, saves time, and tastes delicious.

Raspberry Cheesecake Brownies || Sprinkles and Style

Raspberry Cheesecake Brownies
{adapted from Just a Taste}


Boxed brownie mix {... or your favorite brownie recipe}

Raspberry Cheesecake Filling:
1 8oz. package of cream cheese, room temperature
1/3 cup of raspberry jam {I used seedless}
1 large egg yolk
red food coloring {optional, I used 12 drops to achieve a bright pink color}


1. Prepare the brownie mix according to the box - oven temperature and all.
2. In a separate bowl, whisk together your cream cheese, raspberry jam, and egg yolk. Make sure your cream cheese is at room temperature to prevent lumps in the mix!
3. Pour brownie mixture into a greased pan {I used a 13x9} and spread evenly. Then, pour raspberry cheesecake mixture on top. Marble these two together by cutting through with a butter knife.
4. Bake the brownies for 20-22 minutes.
5. Let these cool for about 15 minutes, cut, serve, and enjoy!
